Orange Chicken Thighs


 Good thing I’ve got leftovers for lunch or I’d be tempted to make another batch!

Ingredients for 6 servings (2 chicken thighs/serving):
  • 12 boneless skinless chicken thighs
  • cooking spray (I use Pam)
  • 1 large navel orange
  • 2 tbsp + 1 tsp honey (~38 g)
  • 1 tsp fresh ginger (~3 g)
  • 1 tsp garlic powder
  • black pepper to taste
  • Optional: cayenne pepper, chives, cilantro
  1. Grate about 1-2 teaspoons of orange rind
  2. Juice the orange, giving you 1/4-1/2 cup, collect the pulp and a little bit of left over juice (~ 1-2 teaspoons). You can use orange juice if you wish, but I prefer the real thing.
  3. Optional: Trim the fat off the chicken thighs, marinade in the leftover juice and pulp with 1/2 teaspoon garlic powder and black pepper
  4. Mix the orange juice with honey, ginger, 1/2 teaspoon garlic powder and black pepper
