Hola – Happy Cindo de Mayo!

I have absolutely not reason to celebrate this holiday, but hey, I love an excuse for any sort of theme party or dinner.

On Saturday I whipped up some enchiladas and enjoyed a grapefruit margaritta.  This is my very un-Mexican way of celebrating this holiday!

Enchiladas

What you need…

  • 8 flour tortillas
  • 1 can of red enchilada sauce (I got mine from Aldi’s, and it was delicious)
  • 1 jar of salsa (I prefer medium heat)
  • 1 cup shredded cheese (I found Kraft jalapeno shredded cheese but anything you have will work)
  • 1 can black beans, rinsed
  • 3 chicken breasts

What to do…

To get shredded chicken, I tossed the chicken breasts in the crock pot with a jar of salsa.  Done.  Put a cover on it and cook on high for four hours (or low for eight hours).
