Fish Fajita Veggies with Mango Guacamole

This recipe is extremely delicious with a few steps that is really easy. The dish is constructed in a way that you can eat a bit of everything in one bite or you can eat everything separately. I recommend getting a little of everything in one bite. It is a bit spicy, citrusy, and slightly sweet. This recipe makes 4 servings.


  • 4 tilapia fillets
  • 1 ½ lemons
  • ¼ cup olive oil. I used one that is infused with fresh blood orange juice.
  • 1/8 cup of balsamic vinaigrette. I used one that is infused with vanilla and fig.
  • Salt and pepper
  • chipotle pepper, cumin, turmeric, and ancho chili, paprika, and white pepper
  • 1 avocado
  • 1 mango
  • Onion
  • Bell pepper
  • tomato

marinating fishMix the first 5 ingredients in a Tupperware with the fish and let it sit in the fridge for at least an hour. I let mine sit for 4 hours.
