Above you can see a beautifully fluffed muffin filled with delicious and nutritious ingredients, courtesy of an old coworker of mine… well, she’s not old, but we used to work together and she was definitely one of my favorite people. Recently she’s started a healthier lifestyle, figuring out wgat works for her.

The great thing about this recipe is it’s fast and easy. Not only that, but they’re great to make on a prep day. You can freeze these little guys, so when you wake up and need a quick on-the-go breakfast, you can just grab one on your way out.

Things you’ll need:
Cupcake tin and liners
Cooking spray
6 eggs
Milk – soy, almond, cow’s milk, any kind will work
Your choice of vegetables – my friends waszucchini, spinach, tomatoes, and green onions
Salt and Pepper
