Meatloaf, Squash and Kale Salad – An Autumn Dinner



The weather is still pretty warm here in Tulsa, but the leaves have begun to fall, and the budget dictates an inexpensive, easy week night dinner that’s guaranteed to please. When we think of autumn, we think of “comfort foods”, and this meal fits the bill with seasonal ingredients and power packed nutrients.

You will need:

1 lb lean ground beef 85% ratio if possible

¼ cup ketchup

1 egg

1 teaspoon (or so) yellow mustard

3 tablespoons hydrated minced onion (we keep this in the fridge all the time)

10 saltine crackers crushed

1 Acorn Squash


Brown Sugar

Black Pepper

Kale – Curly or Laccinato (Dinosaur) – 1 bunch

1 Granny Smith Apple –Finely diced

1 handful Dried Tart Cherries – rough chopped

1 handful Sunflower Seeds – hulled

Red Wine Vinegar

Olive Oil
